Pizza: culture and tradition
With a soft, thin base but with high edges, in Naples, pizza is sacred.
Acquiring UNESCO World Heritage recognition, pizza is loved by young and old alike. Whether it’s a family dinner or an evening with friends, whether it’s an important occasion or simply when you need a quick, satisfying meal, every day is the right day for a pizza.
In addition to the proper leavening of the dough and the use of high quality products, in order to ensure the result is perfect, the use of a suitable, wood fired oven is absolutely essential.
The combination of these three elements, together with the pizza maker’s skill, creates what the Neapolitans call the Regina della Città (the Queen of the City).
Everyone, in this marvellous process of making pizza, has their specific task. Ambrogi, in particular, has assumed the task of guaranteeing excellence in professional pizza ovens.
We at Ambrogi, over the years, have won the hearts (and the stomachs) of everyone who has chosen to use our professional equipment, essential for any pizzeria.
Ambrogi: 80 years of passion and professionalism
Specialising in the manufacture of the best ovens for cooking Neapolitan pizza, Ambrogi is a family-run company that was established over 80 years ago and which has made its passion for pizza its defining factor. Taking over from the old Ditta Carlo Bossi company, Ambrogi has been able to revolutionise the market in an extraordinary way.
By personally handling every step needed to manufacture our wood fired pizza ovens, we at Ambrogi can ensure the very highest qualitative standards together with low costs and power consumption.
Our range of professional equipment is found in the best pizzerias in Italy and around the world, thus bringing a touch of Italianness to wherever they are used: in fact, over 20,000 Ambrogi ovens have already been installed in over 100 countries.
Ambrogi is a company that, although steeped in tradition, is known for its modernity and innovation. Now managed by the third generation, it always exhibits the same deep passion and professionalism of its beginnings.
Our wood fired pizza ovens: characteristics and special features
According to tradition, for the perfect pizza, you need to cook it for approximately 60-90 seconds at a temperature over 400 degrees.
The oven, therefore, plays an essential role in achieving the desired result.
We at Ambrogi have designed and built various oven models which are incredibly suitable to the task at hand.
Their design makes them extremely versatile since they can be placed in both traditional and modern environments and, most of all, in both new and already existing furnishings.
The materials used to make our ovens are of the very highest quality in order to ensure the best possible performance: reaching the correct temperature quickly and with the minimum power. The cooking surface, in particular, is made with refractory tiles baked at an extremely high temperature in order to deliver heat without temperature spikes, not only for a perfectly cooked pizza but also to ensure that the oven can be used continuously for all the hours envisaged.
As tradition would have it, every Ambrogi oven has a fixed surface but comes with just the right touch of modernity and innovation.
In addition, every model can be wood fired or transformed into a gas powered oven.
With outstanding workmanship, each one of our pizza ovens is built to exacting standards of quality and guarantees outstanding longevity, without the need for any special maintenance operations. Finally, the elegant, one-of-a-kind finishes available make this equipment the perfect investment for anyone opening a new catering business.
